TAMALES 101: MULTI-VARIETY TAMALE MAKING class & FEAST

Tamales are for life, not just for Christmas! In this hands-on cooking class designed to show you that making tamales doesn’t require hours of hard work and years of practice, you’ll learn the principles of making great tamales before preparing two very different varieties from scratch at the cooking location of your choice.

First, you’ll make a classic green tamal. We’ll give you all the tips and tricks you need to ensure your masa harina tamales, filled with tangy tomatillo salsa verde and steamed in corn husks, have at least as much flavour and texture as the ones you may have tried at home.

Next, you’ll prepare a lesser-known seasonal tamale made from fresh corn kernels. You’ll grind the kernels into a dough and wrap it in banana leaves to make light and airy tamales de elote, served with your very own smoky red chipotle salsa, which, as tradition dictates, you’ll make in a molcajete.

Finally, whether you take your cooking class at our Art Deco apartment in Condesa, on an art gallery rooftop, at a vintage tequila tasting room, or even at your own accommodation, you’ll set the table with beautiful locally made dinnerware and feast on your creations.

Dietary requirements can be accommodated, and Mexican alcoholic beverages & soft drinks will keep you hydrated throughout the experience.

Among other things, you’ll learn:

  • How to make tamale dough that has the right consistency to ensure light, moist tamales

  • How much salsa and filling to use for the best results

  • Two different tamale-wrapping techniques, so you can master making tamales steamed in both corn husks and banana leaves (Oaxacan style)

  • How to adapt tamale recipes to the ingredients available back home, or your family and friends’ dietary requirements
