MUCHOS MOLES: MULTI-VARIETY MOLE MAKING CLASS & FEAST
Don’t just make mole—master it! In this hands-on cooking class designed to demystify Mexico’s most famous sauce, learn what makes a great mole before preparing two very different versions from scratch at the cooking location of your choice.
First, you’ll make manchamanteles, a red mole that shares ingredients and techniques with famous mole poblano but draws its sweetness from generous chunks of fruit—pineapple, apple & plantain—rather than chocolate.
Next, you’ll prepare an uplifting green mole, whose base of tangy tomatillos and fresh green leaves—spinach, cilantro, parsley & epazote—makes this dish a refreshing change from the heavier varieties of mole you may have tried before.
Before sitting down to eat, you’ll discover the tricks to making the perfect corn tortilla before making your own from fresh masa.
Finally, whether you take your cooking class at our Art Deco apartment in Condesa, on an art gallery rooftop, at a vintage tequila tasting room, or even at your own accommodation, you’ll set the table with beautiful locally made dinnerware and feast on your creations.
Dietary requirements can be accommodated, and Mexican alcoholic beverages & soft drinks will keep you hydrated throughout the experience.
Among other things, you’ll learn:
How to balance chiles, spices, seeds, nuts and other ingredients to give your mole great flavour and texture
How to prepare dry chiles for making mole and other sauces
What options you have for thickening your mole
Why it’s important your mole contains fruit or other sweetening ingredients
How to adapt mole recipes to the ingredients available back home, or your family and friends’ dietary requirements
