So, you’re the proud owner of a new molcajete? Congratulations! Here’s how to make one of our favorite molcajete salsas.

Smoky Chipotle Molcajete Salsa

Ingredients:
2 tomatoes
¼ onion
2 cloves of garlic
1 chipotle chile
salt

1) Toast the chipotle chile on a hot dry pan or comal. Turn it every five seconds or so to avoid it burning until it puffs up fully or starts to smoke, whichever comes first. Remove the chile from the pan and wipe the pan with a dry paper towel to remove excess capsaicin.

2) Char the garlic, leaving the skin on each clove to protect it from the heat. It’s less delicate than the chile, so can be turned every 30 seconds or so.

3) At the same time, char the onion and tomatoes. These should be black all over by the time you’re done, so turn them only every 5 minutes or so. You can;t really overdo these.


4) Wait for the salsa ingredients to cool, dice them, and pound them in your molcajete. Start with the garlic and add some salt to help the process. Next, grind the onion, then the chile, and finally, the tomatoes. Taste, and add more salt if necessary.
